Paesant artichokes Traditional Pack
These artichokes are delicious. They are prepared according to the most ancient Sicilian traditions. They are much prized because of the unmistakable flavour of an original peasant recipe.
The accurate processing is divided into several phases. The product is grown on hilly land (approximately 350 meters above the sea level).
The first choice of the product occurs in open field: we pick up the tenderest buds, being not larger than 50 mm in diameter.
When the artichokes are in the plant they undergo a further process of accurate selection, and then they experience a gentle boiling in water and vinegar to prepare then for the defoliation. Once that the raw material is worked by hand it is kept in special containers to allow the right fermentation.
Only following these strict procedures that determine the achievement of the right PH value, the product can go over to the second stage of processing.
The artichokes are flavoured with garlic, by hand chopped chilli, oregano and mint. These seasonings give a particular aroma to the product. Placed in little jars, the artichokes are dipped in extra virgin olive oil, which is also produced in this area.
