Carciofi Grigliati Conf Tradizionale
These grilled artichokes are delicious. They are prepared according to procedures used by our grandparents. They are appreciated especially for two reasons: for the unmistakable flavour of an old peasant recipe, and for their organoleptic peculiarities.
The accurate processing is divided into several phases: the first selection of the product occurs on the plant: during the harvest men remove those buds that have exceeded a certain size, but also those ones that have suffered leafs damages.
Having finished this phase, artichokes are brought to the plant where women carry out a further process of accurate selection. Then the artichokes undergo a gentle boiling in water and white vine vinegar.
After that the raw material is kept in special containers to allow a correct ripening.
Only after having achieved certain features artichokes can go over to the second manipulation step. With our usual care and loving attention we finally grill our artichokes on a low flame, one by one, making the most of the natural features of the fire to boost the intrinsic qualities of the product.
The grilled artichokes are seasoned with white garlic, sun dried red chilli, crushed oregano and browned mint.
Being arranged according to certain rules the artichokes get placed in little jars and dipped in extra virgin olive oil that comes from the Sicilian hills, where the characteristic "Scirocco" wind guarantees the right balance between moisture and temperature.
