Our olives, picked with attention and cure by people who knows their virtues, are selected and preserved in special containers with water and salt typical of inland sicilian mines.

As soon as they reach a perfect ph they are stored in glass containers, following a secular tradition.

Consequently their strong and sharp taste, the solidity of their flesh and their versatility in adapting to other ingredients without loosing their taste is well maintained.
